Chewy Granola Bars (Gluten-, Dairy-, Egg- & Nut-Free)

Here’s a recipe of a favorite snack in our family.  The version below is nut-free.  You can add nuts and use a nut butter if allergies are not a concern in your family.

Ingredients:

1 3/4 cups quick rolled oats (or quinoa flakes)
1/2 cup palm sugar (or brown sugar)
1/3 cup quinoa flour (or oat flour)
1/2 teaspoon salt
1 teaspoon cinnamon
2 to 3 cups chopped dried fruit, nuts and/ or seeds ( I use chopped dried apricots and cranberries, coconut, pumpkin seeds, shredded coconut and sunflower seeds)
1/3 cup coconut oil or olive oil
1/3 cup sesame paste (or any other seed or nut butter)
1/3 cup brown rice syrup (or honey)

Directions:
Stir together dry ingredients. Stir in fruit and nuts.
Whisk together in another small bowl, the oil, sesame paste, and rice syrup.
Mix together until blended and formed into balls.  Alternately, you can pour the mixture into an 8×8 pan for bars instead of balls. Bake at 350 degrees for 30- 35 minutes and cool completely before cutting in squares.
